Loma de Vida Spa & Wellness at La Cantera Resort & Spa announced today that it is expanding its services as phase two of its Tranquil Transitions reopening. In addition to hair and nail appointments, guests can now select 60-minute massage and facial treatments.  Quenche Juicery will be available with a new menu of healthy bites and re-imagined juice blends and cocktails. Loma de Vida’s Tranquil Transitions initiative includes social distancing, sanitization efforts, contact-free services where applicable and many more. These protocols follow the guidance provided by the CDC, industry associations and the Texas Department of Licensing and Regulations, therefore limiting occupancy levels in the Spa. Reservations are required and no additional guests will be allowed.

Before entering Loma de Vida, guests will receive a touch-free temperature reading; if your temperature is 100 degrees or higher, spa personnel will request you to reschedule after 14 days post fever. All guests will be required to wear masks. Additionally, the Spa’s Pool and Gym is limited to 50 percent capacity.

Loma de Vida’s Tranquil Transitions initiative for the wellbeing of associates and our guests includes:

  • Community Care Coordinators to assist guests with physical distancing reminders and application of sanitizer to high touch surfaces
  • Gentle reminder signage encouraging hand washing and social distancing
  • Masks are required in all areas of the facility except on the pool deck or in the Solarium and they will be required during Massage; gloves also will be offered
  • The Saline Vitality Pool and Himalayan Salt Stone Sauna, along with the lovely patio and resting areas will be open in the Solarium.  The Steam Room will be closed until further notice.

There will be no cash transactions and all retail sales are final with a no return policy. Associates will assist in gathering items in the retail boutique. Moving forward you will not be allowed to have food, glass bottles, or electronic devices in the solarium.

La Cantera Resort & Spa announced last week that it will reopen for business on Wednesday, June 3.  Loma de Vida Spa & Wellness will open Monday June 1 for hair and nail appointments only; and Signature, Inspired by Chef Andrew Weissman, will reopen its award-winning dining room on Tuesday, June 2 at 5:30p.m. for dinner service and Sunday Brunch. Signature hour remains suspended. The Resort golf course is now open seven days a week. (La Cantera Resort & Spa, 2020)

La Cantera Resort will continue to practice social distancing based on guidelines provided by the CDC, American Hotel & Lodging Association, Benchmark Hotels & Resorts, and elected officials, therefore  limiting occupancies in areas such as restaurants, pools, lobby, etc., including limiting overnight occupancy to 50 percent of capacity to optimize social distancing. The Resort will continue to monitor ongoing conditions of COVID-19.

La Cantera Resort has teamed with safety, engineering, chemical partners, consultants and the CDC to develop LA CANTERA’S CLEAN TOUCH initiative.

LA CANTERA’S CLEAN TOUCH standards include:

  • Dedicated Sanitation personnel in all guest and associate areas.
  • Sanitizing stations throughout The Resort
  • Sanitation amenities will be included in your welcome packet and in-room
  • Enhanced valet safety and sanitization procedures
  • Guestrooms subject to electro-misting systems for comprehensive sanitation
  • Daily in-room housekeeping is temporarily suspended
  • The Resort will continue to practice social distancing standards throughout The Resort, based on guidelines provided by the CDC and Texas Government
  • Social distancing in all restaurants and bars with single use menus, gloves and masks for service staff and elimination of self-serve buffets

La Cantera Resort & Spa chefs shares Mother’s Day recipes

Even though La Cantera Resort & Spa will not be open for Mother’s Day this year, their Chefs are sharing some recipes anyone can make at home. (La Cantera Resort & Spa, 2020)

Fiesta Corn Recipe by Chef Gio Silva – Chef de Cuisine, Grille 254
Ingredients:
4 pieces of corn on the cob
¼ cup mayonnaise
¼ cup sour cream
1 tsp. Valentina hot sauce
1 pinch of salt to taste
1 tbsp. finely chopped cilantro
½ cup cotija cheese or queso fresco
1 tbsp. Tajin or chili powder
1 lime cut in wedges

Directions: Simmer the corn in water for about 30 min or until soft, or grill if you prefer. Mix the rest of ingredients, except the cheese and tajin/chili powder. When corn is done cooking, allow to cool down. Either slice the kernels or leave the cob whole. Mix or cover the corn with the Valentina/mayo mix. Sprinkle with cheese and Tajin.

Goldfish Cheddar Mac and Cheese by Chef Robert Carr – Executive Chef, La Cantera Resort & Spa
Goldfish add a nice crunch to creamy macaroni and cheese, while a mild poblano pepper gives the dish an earthy richness without being too hot for the kids. If you do not want to cook and dice the bacon, bacon bits will work.
Ingredients:
½ cup of shredded cheddar
1 roasted and diced poblano chili pepper
½ cup bacon
1 cup crushed cheddar Goldfish

Directions: Prepare the macaroni and cheese according to the instructions. Mix in ¼ cup of the cheddar, ½ cup of the crushed goldfish and the pepper. Top with ¼ cup of cheddar followed by the remaining ½ cup of goldfish and bake at 350 degrees for 10 minutes.

Champagne Margaritas by Chef Gabriela Hinojosa – Chef de Cuisine, SweetFire Kitchen
Champagne Margaritas are so fresh and satisfying and easily adaptable with different fruit purees and garnishes.
Ingredients to yield 1 pitcher:
6oz. lime juice
4oz. orange juice
4oz. tequila
1/4 cup sugar
1 bottle (750ml) Champagne
Ice

Directions: Stir the sugar with the lime and orange juices to dissolve. Add the tequila and fill the pitcher with ice. Pour the Champagne over the ice and stir. Serve in Champagne glasses with a slice of fresh mango or orange wheel.

La Cantera Resort & Spa temporarily closed Resort operations on Friday, March 20 due to the COVID-19 pandemic. The Resort continues to monitor information and guidance from a host of sources. With Easter coming up, Chefs Carr, Hinojosa, Silva and Proa at SweetFire Kitchen, Grille 254 and Primero Cantina, La Cantera Resort & Spa, share recipes for Family Easter Feast at Home. Chef Robert Carr, executive chef, La Cantera Resort & Spa, started his journey to culinary excellence at the age of 13. Inspired by cooking lessons from his grandmother, Chef Carr learned the art of perfectionist, made-from-scratch cooking as a young apprentice under the tutelage of an English chef at the Wichita Country Club in Kansas. Below he shares a recipe that is a family favorite that he will make for his family this Easter.

Warm Butter Mochi

Mochiko Flour 4 cups
Baking Powder 3 t
Granulated Sugar 3 cups
Butter, melted & cooled 1/2 cup
Whole eggs 4 each
Coconut milk 12 oz
Evaporated milk 12 oz
Vanilla extract 2 t

 

o   Combine all dry ingredients together
o   Combine all wet ingredients together
o   Mix dry mixture into the wet mixture
o   Mix until homogeneous. Mix thoroughly
o   Pour batter into baking dish and bake for 1 hour at 350 degrees or until cake is golden and just browned

o   Serve warm with vanilla ice cream and berries

Gabriela Hinojosa, Chef de Cuisine, SweetFire Kitchen, La Cantera Resort & Spa, grew up in Monterrey, Mexico, spending summers on her grandmother’s farm where she helped pick fresh fruits, vegetables and herbs used for family meals. That experience helped shape her love of cooking, which she pursued at the Culinary Institute of America in Hyde Park, New York and then through an internship under the tutelage of master chef Peter Timmins at The Everglades Club in Palm Beach, Florida. Below Gabriela shares one of her Grandma’s recipes, a popular dessert at most Mexican Family Easter Feasts.

Capirotada (Mexican bread pudding)

7 Bolillo bread slices
1/2 lb. Butter
1/2 cup Raisins
1 ½ cups Milk
1 ½ 5 cup Piloncillo (Mexican brown sugar cone)
2 Cloves
1 Cinnamon stick
½ cup Panela cheese
½ cup Peanuts
½ cup Coconut flakes
  • Preheat oven 350F
  • In a pot place milk, piloncillo, cinnamon stick and cloves to make a caramel
  • While making caramel
  • Slice bolillo and start toasting with butter until golden brown
  • Start assembling bread on a deep oven pot- slices of bread- some caramel peanuts, cheese, raisins, and coconut flakes – another layer of bread and repeat process until all ingredients are used

Make sure you use enough garnish on top, then cover with foil and bake for 45 minutes.  Serve warm and enjoy.

Giovanni Silva, Chef de Cuisine, Grille 254, La Cantera Resort & Spa, grew up working at his parents’ restaurant in Mexico. He went to culinary schools in Colorado and California and finished formal training at Colegio Gastgronomico de Guadalajara in Mexico. Silva then embarked on his cooking career on the ocean, working first as a chef on a Royal Caribbean cruise ship and later as chef de cuisine for an Italian specialty restaurant on a Holland America ship. Below, Chef Gio shares one of his Mother’s favorite vegetarian dishes.

Potato cakes with cabbage and carrot salad

Ingredients Potato pancakes:

4 Idaho potatoes
1 egg
1 cup flour divided in two
¼ cup Canola oil
Pinch of Salt and pepper to taste
  • Boil the potatoes in water until tender, about 45 minutes
  • Once soft and cooled, peel and mash; then season with salt and pepper
  • Add the egg and half of the flour until it forms a moldable paste
  • Heat half of the oil in a sauté pan at medium heat
  • Form little discs of potato paste and dust them with the rest of the flour
  • Pan fry in the heated oil until golden brown

Ingredients for salad:

¼ head of green cabbage sliced thinly
1 carrot sliced thinly
½ yellow onion sliced thinly
2 tbsp mayo
1 tbsp sour cream
1 tsp mustard
Pinch of Salt and pepper to taste
  • Mix all ingredients, season with salt and pepper and refrigerate for one hour.

Abraham Proa, Chef de Cuisine, Primero Cantina, La Cantera Resort & Spa, spent time under the mentorship of famed Chef Andrew Weismann at both Signature at La Cantera Resort and Spa and at the former Il Sogno at The Pearl before taking on his current role heading Primero Cantina. The Mexico native said he did not see becoming a chef as a career until the restaurant boom of the 2000s, when he recognized the opportunity. He moved to Las Vegas and worked at the French restaurant at The Cosmopolitan when it was named the Best Restaurant in Las Vegas.  Below Proa shares one of his family’s favorite Easter recipes.

Migas Casserole

8             Large eggs
¼ cup   Milk or half-and-half
1 tsp      Kosher salt
½ tsp    Black pepper
⅓ cup   Canola oil
4             Corn tortillas cut in trips or triangles
½            Medium yellow onion, diced
4             Jalapeño peppers, seeded and diced
1 cup     Shredded cheddar or Monterey jack cheese
1½ cup Salsa, for topping
¼ cup   Cilantro, for garnish
  • In a bowl, whisk eggs with milk. Stir in the salt and pepper.
  • In a large iron skillet, beat up oil on medium high, and place tortilla strips into the skillet, cooking for about 3 minutes, turning once. Remove the tortilla strips with a slotted spoon to a paper towel lined plate. Drain the oil from the skillet leaving 2 tablespoons in the skillet.
  • Add the onions and jalapeno to the pan and cook for a couple of minutes.
  • Add the egg mixture and tortilla strips to the skillet and let the eggs sit for about one minute or until set on the bottom and then gently stir. Sprinkle cheese on top of eggs and continue to cook until melted.
  • Top eggs with salsa and cilantro. Serve with flour tortillas and refried beans.

20th Annual Culinaria Wine + Food Festival

Culinaria is celebrating two decades of wine, food, spirits and fellowship during this year’s Culinaria Wine + Food Festival. Raise your glasses and get ready to say “Cheers to Twenty Years” during the 20th annual Culinaria Wine + Food Festival, this September 26-29, as organizers serve up some of the greatest hits from the last two decades while also preparing exciting twists on some past favorites. After being held in the spring for years, Culinaria Festival is returning to its roots by moving back to September, not far from the date when the first Culinaria launched nearly two decades ago. La Cantera Resort & Spa will host the Culinaria Festival as it has for the past four years. More than 10,000 people are expected to take part in everything from Bubbles, a celebration of champagne, sparkling wine and cocktails at Topaz, the resort’s adult pool, that also boasts the most breathtaking sunsets in San Antonio, to the Festival’s most popular smoky finale of Burgers, BBQ and Beer.

Evenings on the Edge at Topaz: summer pool parties to benefit charities

Evenings on the Edge at Topaz are evening events that benefit local charities and feature live entertainment. This series of popular sunset adult pool parties is back this summer at La Cantera Resort & Spa every Thursday beginning June 6, except for Thursday July 4, and running through August 8 from 7p.m. to 11p.m. Tickets are $30 if purchased in advance; guests must be 21 and over and ID is required. Event is free for resort guests: all they must do is simply present their key at the register desk to receive their wrist bands. Tickets at the door are $40 and Valet at the door is $10. Ticket includes a summer-inspired cocktails and live performances and/or DJ, all with the unrivaled Hill Country views as backdrop. This year, the series includes themed evenings and additional fun and excitement. Attendees will receive a complimentary cocktail upon entry and a Moet Chandon toast at sundown. In the event of inclement weather, ticket will be honored at a future event based on availability; tickets are non-refundable.

Ten private cabañas also are available for rent and require 24-hour cancellation. A portion of ticket sales and cabaña rentals benefit local charities. A Topaz Sunset Pass is available for $150 per person ($300 value) and includes one ticket to each Evenings on the Edge event. Available through week 6, July 18, of 2019 Evenings on the Edge season. La Cantera Resort & Spa is having Gingerbread Decorating Parties this month at the San Gabriel Meeting Room to benefit SA YOUTH and children and adults can both participate in this sweet event. La Cantera Resort will provide the home-made, ready to assemble house and resort Pastry Chefs will offer decorating tips while guests provide the creativity. These decorating parties are set for Thursday, December 6 from 7p.m. to 9p.m. and Saturdays, December 8, 15 and 22 from 10a.m. to 1p.m. (La Cantera Resort & Spa, 2018)

Gingerbread Houses are $50 each and may be reserved by calling (210) 558-2247 or emailing the recreation department. Ten dollars from every Gingerbread House purchased will benefit SA YOUTH. Welcome to Whoville! Join Grinch for a Brunch Feast at SweetFire Kitchen at La Cantera Resort & Spa, Saturday, December 1 from 10a.m. to 3p.m. Grinch will read “How the Grinch Stole Christmas” to the children by the Christmas Tree on Plaza San Saba, just off the patio at SweetFire Kitchen at 11a.m., 1p.m. and 3p.m. Brunch seating will be from 10a.m. to 3p.m. Feast menu includes Roast Beast; Who Hash; Grinch Greens; Cindy Lu Salad; Who Pudding; Grinch Bread, Whoville Feast treats, Grinch juice and so much more. The Grinch will make his rounds, stopping by the tables to pose for photos.(SweetFire Kitchen, 2018)
