The Granary’s Summer Chef Collaboration Dinner Series continues this Sunday July 22 at 6:30p.m. with the second dinner in the series. The three-part dinner series will focus on collaborative menus with nationally and internationally ranked chefs from various culinary backgrounds. This Sunday, The Granary ‘Cue & Brew’s Chef and owner Tim Rattray partners with Charleston Chef BJ Dennis for a Southern smoke potluck style dinner. Chef Dennis is known for hosting several pop-up dinners, especially in Charleston, where he incorporates Gullah Geechee cooking, a style of cuisine from the culture of the descendants of West African slaves who settled on the coasts of South Carolina and Georgia. This summer-long celebration will take place from Friday June 15 to Sunday September 16 to commemorate the city’s 300th anniversary. For the Olé edition of Sound Cream, DJ Isaiah will take over Pearl Park with a Rihanna themed dance party on July 18th and DJ Miranda Maxwell will have a Sade themed set on the 25th. Sound Cream will occur every Wednesday during the summer.

The Culinary Institute of America will join Pearl in celebrating San Antonio’s 300th birthday by hosting a class featuring Paella, one of Spain’s most iconic dishes. Tickets are available online for $25.

Master Class Plancton Marino at 5:30 p.m.
Hotel Emma will offer visitors and San Antonians the chance to have an in-depth lesson on plancton. Larder and Sternewirth will be serving Spanish plancton in tapas and dishes designed to highlight the ingredient. Expert Alberto Palomar will also teach a master class on plancton. Canciones at 5:30 p.m.
Canciones is a free concert series dedicated to Texas. During Olé, San Antonio, visiting artists from Spain will showcase their music alongside South Texas favorites. South Texas Indie Latin orchestra Volcán will open this edition of Canciones at Pearl followed by Spanish composer, vocalist and saxophonist Antonio Lizana. Canciones is free and open to the public.

Thursday, July 5: First Thursday Night Market at 4p.m.
Journey into Spain by joining Pearl for the Olé edition of First Thursday Night Market. San Antonio’s esteemed flamenco troupe, Arte y Pasion, led by dancer and artistic director Tamara Adira, presents a visually stunning and theatrical performance of traditional Spanish dance. Night Market goers will still be able to purchase items from their favorite vendors with Spanish-themed goods.
Friday, July 6: Flamenco Performance by Carlos Rodriguez at 8:30p.m.
Pearl Amphitheater will host Madrid-based Carlos Rodriguez for a Spanish dance performance. He will perform along with his eight-person company of musicians and dancers, Bendita, which blends original flamenco music (performed live) with Spanish dance styles ranging from Fandangos to Rumbas. This event is free and open to the public. Pearl Amphitheater overlooks the San Antonio River and is located between La Gloria and Hotel Emma.
Sunday, July 8: Flamenco Tablao featuring Carlos Rodriguez and Chef Johnny Hernandez at 6p.m.
Join Pearl Stable in a Spanish-inspired “tablao” to showcase dynamic entertainment and great culinary fare. Hotel Emma is hosting Culinary Monographs this summer to honor Spain’s most beloved flavors.
Olé, San Antonio is in full swing at the Pearl and Hotel Emma is joining in the celebration by hosting Culinary Monographs. These are six delicious, immersive experiences that will honor the most beloved flavors of Spain: olive oil, jamón (Spanish ham), tinned fish, salt and spices, wine and sherry and cheese, to help celebrate San Antonio’s Tricentennial. These culinary monographs will take place every two weeks, beginning on Wednesday/Thursday from June through September, each offering a look into the history, craftsmanship and diversity of flavor and utility of each product.
Each monograph includes a ticketed Monograph Session facilitated by experts and makers of the individual product. Guests will enjoy, depending on theme, a deep dive into the culture, economy and trends of the product and an expertly guided tasting opportunity. There will be an open-to-the-public Casual Tasting at Larder, where the fine grocery store at Hotel Emma will support each monograph with a multi-day tasting of the highlighted product. Tapas tastings will be held at Sternewirth, the main bar at Hotel Emma, which will create a special tapas dish highlighting the product at play. There will also be a Dinner at Supper series, where Chef John Brand will create a special tasting menu highlighting the various uses, applications and flavors of the spotlighted product. Monograph Sessions and Dinner at Supper will be ticketed events, while Tapas will be a menu option for Sternewirth guests and tastings at Larder will be free and open to the public. The Tricentennial-inspired Cabezudos Parade will debut at the Pearl Farmers Market and culminate in a live performance by Volcán, the 13-piece Indie-Latin Orchestra based in South Texas. The first dinner in the series takes place on Sunday June 10 at 6:30p.m. with Chef John Tesar of Knife Dallas. Hosted by The Granary Chef and Owner Tim Rattray, the three-part dinner series will focus on collaborative menus with nationally and internationally ranked chefs, including John Tesar of Knife Dallas, BJ Dennis of Charleston and acclaimed Chef Bo Bech of Geist in Copenhagen. The first dinner on Sunday, June 10 is expected to be a steakhouse takeover by Chef Tesar. The seven-course menu will focus on Texas-sourced ingredients including a bacon tasting, venison tartare, oxtail ravioli, dry-aged rib eye and more. Reservations are required for guests who plan on attending any of the dinners and may be made on Open Table through The Granary or by calling (210) 228-0124. The dinner will be $85 per person and does not include tax and gratuity.
Chef Tesar is a four-time James Beard “Best Southwest Chef” semifinalist and “Top Chef” contestant. He specializes in modern American cuisine prepared with authentic European techniques, all served up to his guests at Dallas-based steakhouse, Knife. He has over 20 years of experience in the culinary world and has been featured in Esquire Magazine, Food & Wine and New York Magazine.

Scheduled events will have a common thread: an intercambio, an exchange and collaboration between the cultures of Spain and San Antonio, creating experiences and memories completely unique to Olé. Restaurants at the Pearl will feature Spanish menus and chef collaboration dinners, retailers will feature specially curated Spanish items, and there will be a variety of activities at the Pearl Park.
The official opening day is Thursday June 21 with a Dia Mundial de la Tapa (International Day of the Tapa) tasting at Pearl Stable, a flamenco performance in Pearl Park by Pure Flamenco Primitivo Family Dance Company and a celebration of Spanish cuisine and cooking techniques at the Culinary Institute of America campus at Pearl.
Gastronomy:
Pearl will have a total Spanish take-over of the restaurants onsite as they host Tapas Tuesdays, Gin Tonic Thursdays, Spanish wine selections and more. Collaboration dinners will include Spanish chefs paired with Pearl chefs. The Culinary Institute of America in San Antonio (CIA) will host Spanish master classes for students and food enthusiasts that will center around popular Spanish cuisine like tapas, paella and Spanish wines. Hotel Emma will present several culinary concierge-driven Spanish demos and immersive tastings as well as classes around the six essential Spanish food categories: olive oil, wine, cheese, jamón (ham), salts/spices and conservas (tinned fish). Supper, Larder and Sternewirth will incorporate Spanish-influenced items, such as flamenquines, saffrón and Spanish sea salts, jamóns, tapas, sangrias and gin tonics. Hotel Emma will also host several Spanish dinners at Supper featuring chefs from Spain and regional Spanish chefs.
Music and dance:
Spanish music and dance will come to life at Pearl with intercambio performances that will range from flamenco to jazz to DJs to mariachi. World-renowned flamenco dancer Carlos Rodriguez will present a special performance at Pearl Park. Spanish DJs will collaborate in their performances with South Texan counterparts and there will be an evening of zarzuela with Casa de España en San Antonio. Spanish artist Concha Buika is scheduled to perform at Pearl Park in August. She is a Grammy nominated artist and voted one of the world’s “50 Great Voices” by NPR whose music includes flamenco, Latin, jazz and R&B.
Arts and architecture:
Ana Juan, an artist, illustrator, painter and winner of the 2010 Spanish National Illustration prize, will be creating a limited-edition serigraph honoring the city’s long history printed by master serigrapher Manolo Gurillo. The Olé Galería (gallery) will feature exhibitions of contemporary Spanish graphic artists and works from visiting Spanish photographers Beatrix Mexi Molnar and Andres Marin. Olé will also be collaborating with the San Antonio Museum of Art on its exhibition Spain: 500 Years of Spanish Painting from the Museums of Madrid.
Finally, the closing day is scheduled for Sunday September 16 and the day’s events will feature an intercambio dinner with Spanish chefs working with Pearl chefs, a mariachi-flamenco performance with Spanish guitarist Luis Gallo performing with local San Antonio artists as part of Mariachi Lab and a Cabezudos (big heads) parade representing key figures in the city’s history. A short film, the product of a collaboration between visiting Spanish and San Antonio-based artists, will premiere at the event.
