Fermenteria opens taproom in San Antonio

Fermenteria, a unique new alcoholic beverage, introduces hard water kefir to the San Antonio market. Photo: Giant Noise Partners, used with permission.

San Antonio’s newest taproom — Fermenteria — is now open for business at 2243 East Commerce. Fermenteria is a hard water kefir beverage that is naturally fermented and alive with hundreds of strains of probiotics, enzymes, vitamins, minerals, and antioxidants. Kefir grains are used to balance the fermentation environment, then flavored with botanicals and natural extracts for a lightly sweet and effervescent finish. The alcohol is created from a wild yeast culture that occurs within the fermentation process. (Fermenteria, 2024)

Fermenteria is owned by entrepreneur Jade Sheppard, who studied at the University of Texas in Austin. The team at Fermenteria learned how to make hard water kefir after first trying it in Nicaragua and spent the last two years working with brew masters in central Texas to build a formula and method that would allow her to brew it commercially.

“When I first tried hard water kefir, I was astonished at how light and bubbly it was because it gave me a great little buzz with no hangover. I couldn’t be more excited to share this great drink with the Central Texas community. Now that we’ve opened our doors, Fermenteria will be a fantastic, healthy alcoholic alternative.” – owner Jade Sheppard.

Every ingredient used at Fermenteria is curated for quality and flavor profile. Water kefir beverages contain 100% naturally occurring enzymes, probiotics, vitamins, minerals and antioxidants that support  the gut’s biome, aiding in metabolism and strengthens the immune system. Fermenteria’s alcoholic beverages contain 5% alcohol, zero sugar, and are only 100 calories. Flavors include Pineapple Lemongrass, Brut, Hibiscus Sangria, Paloma, Thai Lime Coconut, and Orange Elderflower. The taproom will also be serving several non-alcoholic options including nitro cold brew coffee and espresso beverages in addition to some water kefir flavors. Non-alcoholic flavors include Pineapple Coconut, Butterfly Pea Tea Lemonade, and Strawberry Lime Tulsi.

The taproom is open Wednesday through Sunday. Operating hours are 4p.m. to 10p.m. on Wednesdays and Thursdays, 4p.m. to midnight on Fridays, 11a.m. to midnight on Saturdays, and 11a.m. to 9p.m. on Sundays. In addition to enjoying Fermenteria in the taproom, guests can also purchase growlers to-go or bring in their own container. Fermenteria will soon be bottling its product to be available at local grocery and convenience stores; more information to be announced at a later date. Local bars and restaurants interested in carrying Fermenteria on tap can contact the taproom for more information.

With a commitment to work alongside the small business community, Fermenteria will host a free monthly community event for San Antonio residents to look forward to. Each event will give back proceeds being donated to a local nonprofit. The first community event at Fermenteria will be held from 6p.m. to midnight on Saturday, April 13. The event will benefit the Thrive Youth Center, a shelter for LGBTQ+ youth.

Picadas releases new variety pack with brand new flavor

The ready to drink Mexican beverage has been rapidly growing as it approaches its first year in the U.S. market. Photo: Picadas, used with permission.

Picadas, the first Mexican hard agua fresca, released a new variety pack of 12 cans with four different flavors, including a brand-new flavor, Piña (pineapple), which is found exclusively in the variety pack. The original flavors—Limonada, Mango and Guava—are included in the pack. Made from a family recipe, Picadas combines real fruit juice with alcohol from cane sugar to create a hard agua fresca that embodies the bold, authentic flavors of Mexico. (Picadas, 2023)

The Mexican ready-to-drink beverage was released in the United States in January 2023 to 200 H-E-B stores across Texas and, since then, has seen rapid growth. Picadas is now available at all H-E-B stores and has added multiple other retailers in Texas, including Buc-ee’s, Quick Trip in North Texas, and Total Wine.

Picadas was founded in Monterrey, Mexico, in 2021 by Hugo Martinez, a local who –– like everyone in Mexico –– grew up enjoying homemade aguas frescas with his family. Martinez was pursuing an MBA at Stanford when he became captivated by the ready-to-drink cocktail craze. Martinez began selling Picadas at mercados and local farmers’ markets in Monterrey. As the drink gained popularity and word began to spread around the country, Martinez formed strategic partnerships that got Picadas into stores like Vinoteca, H-E-B, Soriana, Chedraui, and other Mexican chains. Martinez partnered with Austin-based Redbud Brands to expand Picadas to its first U.S. market.

“I’m incredibly proud to see how Picadas has resonated with consumers. Based on the success of six-packs, we knew it was time to expand into the variety 12-pack. It is a testament to the strong appeal for Mexican products, embraced not only by Mexicans but by everyone in the U.S. We are thrilled to launch this new Piña flavor and variety pack to continue to offer more unique, authentic Mexican flavors to our customers.” – Hugo Martinez, founder of Picadas.

Picadas blends the juice in small batches, allowing it to retain a bold, fruit-forward flavor, with no need for artificial additives. The mixture is then sweetened with agave, and cane sugar alcohol is added. Every 12-ounce can contains 130 calories and 4.5% alcohol by volume. In addition to the newly released variety 12-pack, six-packs of individual flavors are available at all retail stores. Each pack is accompanied by an Individually portioned packet of spicy chili salt to place on the rim and enjoy with each sip. Six-packs retail for $10.99, and variety packs retail for $19.99.

Picadas is a ready-to-drink, hard Mexican agua fresca made with real fruit. The name Picadas comes from the word “piquete,” the Spanish slang for “spiked.” A packet of chili lime salt accompanies every pack of Picadas to enjoy on the rim in classic Mexican style. Picadas aims to showcase the vibrancy of Mexico with four distinctive flavors: Mango, Limonada, Guava, and Piña. Founded by Stanford Business School graduate Hugo Martinez, Picadas is the culmination of his quest for a drink that faithfully re-creates the taste he grew up with in Mexico.

Aguasol’s additive free tequila steals the spotlight

Friends Charles Attal and Eduardo Margain made their vision for an additive free tequila a reality when they released Aguasol earlier this year. Photo: Aguasol, used with permission.

Fully mature agave, natural spring water, and the Jalisco, Mexico sunshine are the only three things inside Aguasol’s distinctive, ridged bottle. Named for its simplicity, Aguasol was born backstage at a live music festival, through a bolt of inspiration from the brains of Charles Attal (co-founder of C3 Presents) and Eduardo “Eddie” Margain (co-founder of Austin FC). (Aguasol, 2023)

The two friends were enjoying the final weekend of Austin City Limits Music Festival 2017 when they found themselves feeling sluggish and slow after a weekend of celebrating. Between sets, Attal and Margain discussed their shared desire for a clean tequila, one without any sweeteners, glycerin, artificial flavors or colorings — only the essentials. They forged a pact to make a fine tequila made honestly, transparently, and traditionally from the best agave available.

Aguasol offers two additive free expressions — blanco and reposado. The reposado is produced using the same traditional process as the blanco, then aged in American bourbon barrels for three months. The tequila presents subtle hints of cooked agave with mild pepper and soft oak.

Aguasol is currently available throughout Texas in over 850 retail stores and 900 bars and restaurants.

“We started selling it quietly earlier this year and the reception has been incredible. We sold over 5,500 cases in four months, and we’re on track to move 10,000 cases in eight months, all with zero marketing. – Charles Attal

Attal and Margain kicked things off by sharing their new tequila with the city they call home at Austin City Limits Festival 2023 in October, where it was served up throughout the park over the two festival weekends.

Proceeds are donated to the Careyes Foundation in Jalisco, which catalyzes innovative programs in education, environment, wellness, and the arts to improve the well-being of 12 rural communities along the South Pacific coast of Mexico.

Just in time for Bourbon Heritage Month coming up in September, Bib & Tucker Small Batch Bourbon is proud to announce the release of Bib & Tucker Double Char Bourbon. It is available nationally, in-store, and online. (Bib & Tucker, 2023)

Inspired by the turn of the century in America, when food was cooked on the open flame, this new bourbon from Bib & Tucker Small Batch Bourbon is aged twice to create savory smoky notes and an exceptionally smooth finish. Bib & Tucker Double Char is first aged for six years in the rolling hills of Tennessee in new white American oak, followed by a minimum of five months in a second heavily charred and smoked new barrel. This unique fire-forged double char aging method creates the rich and deep flavor of Bib & Tucker Double Char.

Bib & Tucker Double Char Tasting Notes:

  • Nose: A touch of smoke with immediate notes of toasted oak and dulce de leche, background notes of cinnamon and clove
  • Palate: Vanilla and sugar maple surrounded with white smoke, hints of sweet corn and toasted cinnamon
  • Finish: Medium to long finish with oak, white smoke and vanilla
  • Color: Deep rich mahogany with copper undertones

The lineup of Bib & Tucker Small Batch Bourbon includes:

  • The Classic Six: 6-Year-Old Small Batch Bourbon Whiskey – SRP: $54.99; 92 proof/46% ABV
  • Double Char: 6-Year-Old Small Batch Bourbon Whiskey – SRP: $54.99; 88 proof/44% ABV
  • 10-Year-Old Small Batch Bourbon Whiskey – SRP: $89.99; 92 proof/46% ABV

Bib & Tucker crafts award-winning small batch bourbons that are aged to perfection for a minimum of 6 years. The name, bottle and small batch approach were inspired by the turn of the century in America, a time of unprecedented progress and adventure when all bourbon was small batch. Aged in the rolling hills of Tennessee, Bib & Tucker does not cut corners and uses no additives, artificial flavors or artificial colors. In a time when other brands are taking their age statements away, Bib & Tucker proudly puts the age statement on the front of every bottle. Festive drinks for Cinco de Mayo celebrations

Smirnoff ICE Preparadas. Photo: Chris Perez, used with permission.

Cinco de Mayo is this Friday, and if you are looking for cocktail ideas for your get together, here are two of them. (Giant Noise, 2023)

Cantina Margarita:

Austin-based CANTEEN Spirits launched a Mexican-inspired, margarita-style hard seltzer in February 2023. It is currently available throughout Texas with national distribution coming soon. Dubbed the Cantina Margarita, the new seltzer is available in three flavors — original (margarita), strawberry, and mango. Each 12-oz can contains only 110 calories, 1 gram of sugar, and 1 gram net carbs and is brewed at 6% alc/vol, higher than most big brand hard seltzers. Unlike their previous lines, the Cantina Margarita is made with alcohol produced from cane sugar, a departure from the company’s spirit-based model.

“After carefully examining the current RTD market, we saw the popularity of hard seltzers declining, with one exception: Mexican-inspired cocktails like margaritas and agua frescas are still growing, and doing so at a rapid pace. Expanding from spirit based RTDs into the hard seltzer realm was a natural evolution for CANTEEN.” said CANTEEN’s co-founder and CEO, Brandon Cason.

Smirnoff ICE Preparada:

The Smirnoff ICE Preparada is over-the-top, bright, and colorful, just like Cinco de Mayo. It showcases an array of ingredients and flavors and is endlessly customizable. Made from a refreshing combo of Smirnoff ICE, fresh chopped fruit, chamoy, chili salt, and spicy/sour Mexican candies, the drink was first popularized at drive-thru daiquiri shops in Texas’ Rio Grande Valley.

Preparadas skyrocketed in popularity at San Antonio’s iconic Fiesta celebrations in 2011 and have been a staple of the city-wide party ever since. They are now regularly enjoyed at bars, restaurants and festivals throughout Texas in the spring and summer months. Here is a recipe to make one of your own at home:

Ingredients

  • 1 (one) 11.2 oz bottle of Smirnoff ICE (Original, Spicy Tamarind or Green Apple flavor)
  • 1 oz chamoy
  • chili salt (for rim)
  • 1/2 cup diced pineapple
  • 1/2 cup diced strawberries
  • sour gummies, and Mexican candies
  • 1 package dried chili mango
  • 1 bamboo skewer

Instructions

  • Rim your favorite glass with chamoy and chili salt
  • Fill glass with ice
  • Add in diced pineapple and strawberry
  • Fill glass with your favorite flavor of Smirnoff ICE
  • Top with sour gummies and Mexican candies.
  • Drizzle chamoy over gummies and candies
  • Garnish with skewer of fruit, candies, and chamoy

We have an outstanding and very capable brew team, we have a certified organic production facility, and we have a dedication to making world class organic beverages for adults. There are a lot of great craft beers in the market, but there aren’t enough of them meeting the high standards to qualify as organic. We want to change that.” – Bill Gillies, Founder and CEO of Big Country

There will be a launch party at Big Country® Organic Brewing Co. on Friday, April 7 from 4p.m. – 8p.m. with live music, new food truck menu items, giveaways and more. Big Country® will be a main sponsor at the inaugural Wild West Brew Fest Pflugerville on Saturday, April 8 from 3p.m. – 9p.m., and will be sampling the TexMex Lager along with several limited release brews.

Their Fair Trade commitment means that every can puts fair wages directly into the hands that harvested its ingredients. It also ensures farmers work in safe conditions, protect the environment, build sustainable livelihoods, and earn additional money to empower and uplift their communities. Big Country® fair trade purchases have sent over $91k to the farmers since they started.

Mexican made hard aguas frescas now available at H-E-B

Picadas is the first Mexican made hard aguas frescas and is available in over 200 H-E-B locations throughout Texas. Photo: Picadas, used with permission.

Picadas, the first Mexican hard agua fresca, is now available in 200 H-E-B stores across Texas. Made from a family recipe, Picadas combines real fruit juice with alcohol from cane sugar to create a hard agua fresca that embodies the bold, authentic flavors of Mexico. (Picadas, 2023)

Picadas was founded in Monterrey, Mexico in 2021 by Hugo Martinez, a local who –– like everyone in Mexico –– grew up enjoying homemade aguas frescas with his family. Martinez was pursuing an MBA at Stanford when he became captivated by the ready-to-drink cocktail craze.

“The popularity of hard seltzers was skyrocketing, but I quickly realized that they didn’t have the same flavors I was used to. I craved the agua fresca flavors I grew up with – limonada, guava, and mango – that none of the American ready-to-drink options really captured. I realized there was a gap in the market that only a Mexican-made hard agua fresca could fill, because Mexicans never sacrifice flavor. The idea for Picadas was born.” – Hugo Martinez, founder of Picadas.

Following graduation, Martinez returned to his hometown of Monterrey, Mexico and got to work brewing his first batch using a recipe he learned from his grandmother. Martinez spent several weeks recreating the recipe with different Mexican fruits, fruit juices, and types of alcohol. He shared his creations with friends and family, tweaking his ingredients, and methods to incorporate their feedback and indulge their taste buds. The overwhelming response was “más sabor” and “escarcharlo,” — more flavor, and a spicy chile rim to create contrast and depth. In November of 2021, he launched the first batch of Picadas in Monterrey.

The brand’s creative name comes from the term “con piquete,” colloquial Mexican slang meaning “spiked” or “with alcohol.” Hence, aguas frescas with “piquete” would then be called aguas “Picadas” and while it is not a term often used, Martinez hopes that soon “aguas picadas” will be commonly used in the U.S. when referencing hard agua frescas.

Martinez began selling Picadas at mercados and local farmers markets in Monterrey. As the drink gained popularity and word of it began to spread around the country, Martinez formed strategic partnerships that got Picadas into stores like Vinoteca, H-E-B, Soriana, Chedraui, and other Mexican chains. Now, Martinez has partnered with Austin-based Redbud Brands to expand Picadas to its first US market, Texas.

Picadas is available in three flavors — limonada, mango, and guava — and all are made with a base of real fruit juice (unlike hard seltzers, which use a base of water). Martinez insisted on using tart key limes for the limonada because “that’s how Mexican limonadas are prepared,” sweet yellow mangos “because those are the mangos we eat in Mexico and floral Mexican guavas to set Picadas apart in the RTD category.

Picadas blends its juice in small batches, allowing it to retain a bold, fruit-forward flavor, with no need for artificial additives. The mixture is then sweetened with agave, and cane sugar alcohol is added to make it “piquete.” Every 12-ounce can contains 130 calories and 4.5% alc/vol. Each can is accompanied by an individually portioned packet of spicy chili salt to place on the rim and enjoy with each sip. Six-packs retail for $10.99 at H-E-Bs throughout the Lone Star State. As the first hard agua fresca to be distributed in Texas, Picadas is positioned to lead the ready-to-drink market in a new direction.

Picadas loves to have fun, and this belief is made apparent by the brand’s unique packaging. Cartoon-style artwork in eye-catching colors is featured on the boxes and cans, making Picadas an attractive addition to store shelves. The packaging design is also meant to encourage consumers to enjoy every sip, and not take things too seriously.
