Mariachi Lab at Pearl returns for a new Olé, San Antonio edition with local artists and Spanish guitarist Luis Gallo. The second annual Mariachi Lab will take place on September 16 from 1p.m. to 8p.m. in a day-long and campus-wide finale to Olé, San Antonio, Pearl’s summer-long initiative celebrating the city’s cultural connection to Spain. Mariachi Lab showcases mariachi talent from San Antonio, from youth to top-level performers, along with interactive workshops and activities for children. (Pearl, 2018)
Las Mujeres Showcase in the Pearl Stable is a ticketed event and new to this year’ s event. This headlining show will feature a collaboration between Vanessa Del Fierro of Las Coronelas and renowned Spanish guitarist Luis Gallo. Madrid-based Gallo performs on an international circuit and is one of the most acclaimed guitarists in the flamenco scene. He hails from Madrid, Spain and is well-versed in jazz, classical and flamenco genres and one of the most acclaimed guitarists in the flamenco scene. Gallo performs on an international circuit while remaining firmly rooted to his Spanish origins. His latest project – Caminos de la Guitarra (“Paths of Guitar”) – traces the historical journey of the guitar back to 15th century Spain.
Pearl is partnering with area high schools, San Antonio Mariachi Academy, Guadalupe Cultural Arts and the Consulate General of Mexico. In addition to live performances, workshops and activities, Pearl will feature vendors such as Mr. Piñata and Snake Hawk Press. Restaurants will also feature different specials that day to celebrate Olé’s finale.
Mariachi Lab performances are free and open to the public except Stable performances, which are $25 per person. Tickets for Stable performances can be purchased online.

· Stemming from Madrid, Luis Gallo, a well-versed guitarist in jazz, classical and flamenco genres will perform his latest project–Caminos de la Guitarra (“Paths of Guitar) at Pearl Park. This event is free and open to the public with food and drink available for purchase in the Bottling Department.
Wednesday, September 5: Master Class: Queso (Cheese) at 10:30a.m. and 5:30p.m.
· Hotel Emma will host its final Master Class: Queso (Cheese). Expert Max McCalman will be the cheese connoisseur of the day, talking through the range and traditions of Spanish cheeses. There will be a short documentary, lesson from the expert and a cheese and wine pairing. Larder and Sternewirth will be carrying tapas and dishes specifically designed to highlight Spanish cheeses. Thursday, September 6: Federico Garcia Lorca Cava Reception at 5p.m.
· Join Pearl for a cava reception and program celebrating the creative works of Federico Garcia Lorca with actor, playwright, and musician Jose Ruben DeLeon. This event is located at Galería Olé (302 Pearl Parkway, Suite 110) and is free and open to the public.
Thursday, September 6: First Thursday Night Market Olé Edition at 4p.m.
· For this First Thursday Night Market Olé Edition, acclaimed Spanish guitarist, Luis Gallo, will collaborate and perform with students from the Guitar Program at The University of Texas at San Antonio (UTSA). Night Market goers will be able to purchase items from their favorite vendors with Spanish-themed goods. This event is free and open to the public.

· Journey into Spain as Pearl Stable transforms into a Spanish-inspired “tablao” to showcase dynamic entertainment and great culinary fare. Performances will include The Aaron Prado Trio and Luis Gallo. Chef Johnny Hernandez will begin the evening with passed tapas and dinner served family-style. Sunday, September 16: Mariachi Lab at 1p.m.
· Olé’s spectacular finale, Mariachi Lab, will return for the second year. Showcasing mariachi talent from across San Antonio including high school, college, all-female and top-level professional performers. There will be multiple live performances throughout the day. Pearl Stable will host a ticketed event with performances by all-female groups such as Mariachi Flor de Jalisco, Damas de Jalisco, Las Coronelas and Las Altenas. As part of Olé, San Antonio programming this summer, the Pearl invites exemplars of the Spanish culinary scene—from Michelin-starred to up-and-coming Market chefs—to participate in intercambios, exchanges, with Pearl counterparts. Chef Jeff Balfour of Southerleigh Fine Food & Brewery is hosting a Spanish dinner paired with Southerleigh brews and Spoetzl Brewery’s special limited edition Olé brews with Chef Jorge Fernandez Rodríguez of Madrid, Spain on Wednesday August 29 at 6:30p.m. The dinner includes a welcome reception curated by Southerleigh’s Chef Jeff Balfour and a 5-course seated dinner by guest Chef Jorge Rodríguez. The ongoing summer celebration Olé, San Antonio at the Pearl is meant to commemorate the city’s 300th anniversary and celebrate its Spanish heritage. Hotel Emma has been participating by hosting master classes featuring food and ingredients from Spain. This Wednesday August 22 from 5:30p.m. to 8:30p.m., attendees are invited to discover the exemplary Spanish flavor of jamón at Hotel Emma’s next master class. They will be able to enjoy a tasting and lesson taught by Manuel Antonio Recio, master carver and co-owner of Conserva from Portland, Oregon, as they discover the process and celebrate the noble Spanish pig.
Manuel Antonio Recio will be the expert of the day. He is a master carver and co-owner of Conserva, a specialty food purveyor located in Portland, Oregon. The evening will feature a lesson from Manuel and a tasting – all devoted to jamón. Tickets for the class are $25 and available for purchase online.

As part of their culinary series during Olé, San Antonio, Hotel Emma will be presenting a unique experience on July 25 from 5:30p.m. to 8:30p.m. titled ‘Master Class: Plancton Marino.’ This innovative ingredient new to the culinary scene is described as tasting “authentically like the sea.” Tickets for the session are $25 and available for purchase online. Plancton Marino, as an ingredient, is new to the culinary scene. Spain is the only country with authorization to cultivate the tiny marine organisms. Embraced by leaders in the cutting-edge Spanish gastronomy scene, plancton marino exemplifies the latest installment in Spain’s long history of experimenting with innovative techniques and ingredients.
Scheduled to take place at Hotel Emma’s exhibition kitchen, guests will have the opportunity to experience and discover plancton marino, which is not available anywhere in the United States. The special event will welcome expert and leading Spanish marine plancton food consultant Alberto Palomar who will talk about the origins of plancton marino as an ingredient in Spanish cuisine, the process of cultivation and the nutritional benefits. Sea food and sea salt lovers are encouraged to attend and try out this unique ingredient. There will also be a short documentary and a tasting activity.
Supper will feature a la carte specials on the menu with dishes highlighting Chef John Brand’s creative uses of plancton marino. The specials will be available during lunch and dinner service. Hotel Emma is hosting Culinary Monographs this summer to honor Spain’s most beloved flavors.
Olé, San Antonio is in full swing at the Pearl and Hotel Emma is joining in the celebration by hosting Culinary Monographs. These are six delicious, immersive experiences that will honor the most beloved flavors of Spain: olive oil, jamón (Spanish ham), tinned fish, salt and spices, wine and sherry and cheese, to help celebrate San Antonio’s Tricentennial. These culinary monographs will take place every two weeks, beginning on Wednesday/Thursday from June through September, each offering a look into the history, craftsmanship and diversity of flavor and utility of each product.
Each monograph includes a ticketed Monograph Session facilitated by experts and makers of the individual product. Guests will enjoy, depending on theme, a deep dive into the culture, economy and trends of the product and an expertly guided tasting opportunity. There will be an open-to-the-public Casual Tasting at Larder, where the fine grocery store at Hotel Emma will support each monograph with a multi-day tasting of the highlighted product. Tapas tastings will be held at Sternewirth, the main bar at Hotel Emma, which will create a special tapas dish highlighting the product at play. There will also be a Dinner at Supper series, where Chef John Brand will create a special tasting menu highlighting the various uses, applications and flavors of the spotlighted product. Monograph Sessions and Dinner at Supper will be ticketed events, while Tapas will be a menu option for Sternewirth guests and tastings at Larder will be free and open to the public. Scheduled events will have a common thread: an intercambio, an exchange and collaboration between the cultures of Spain and San Antonio, creating experiences and memories completely unique to Olé. Restaurants at the Pearl will feature Spanish menus and chef collaboration dinners, retailers will feature specially curated Spanish items, and there will be a variety of activities at the Pearl Park.
The official opening day is Thursday June 21 with a Dia Mundial de la Tapa (International Day of the Tapa) tasting at Pearl Stable, a flamenco performance in Pearl Park by Pure Flamenco Primitivo Family Dance Company and a celebration of Spanish cuisine and cooking techniques at the Culinary Institute of America campus at Pearl.
Gastronomy:
Pearl will have a total Spanish take-over of the restaurants onsite as they host Tapas Tuesdays, Gin Tonic Thursdays, Spanish wine selections and more. Collaboration dinners will include Spanish chefs paired with Pearl chefs. The Culinary Institute of America in San Antonio (CIA) will host Spanish master classes for students and food enthusiasts that will center around popular Spanish cuisine like tapas, paella and Spanish wines. Hotel Emma will present several culinary concierge-driven Spanish demos and immersive tastings as well as classes around the six essential Spanish food categories: olive oil, wine, cheese, jamón (ham), salts/spices and conservas (tinned fish). Supper, Larder and Sternewirth will incorporate Spanish-influenced items, such as flamenquines, saffrón and Spanish sea salts, jamóns, tapas, sangrias and gin tonics. Hotel Emma will also host several Spanish dinners at Supper featuring chefs from Spain and regional Spanish chefs.
Music and dance:
Spanish music and dance will come to life at Pearl with intercambio performances that will range from flamenco to jazz to DJs to mariachi. World-renowned flamenco dancer Carlos Rodriguez will present a special performance at Pearl Park. Spanish DJs will collaborate in their performances with South Texan counterparts and there will be an evening of zarzuela with Casa de España en San Antonio. Spanish artist Concha Buika is scheduled to perform at Pearl Park in August. She is a Grammy nominated artist and voted one of the world’s “50 Great Voices” by NPR whose music includes flamenco, Latin, jazz and R&B.

Ana Juan, an artist, illustrator, painter and winner of the 2010 Spanish National Illustration prize, will be creating a limited-edition serigraph honoring the city’s long history printed by master serigrapher Manolo Gurillo. The Olé Galería (gallery) will feature exhibitions of contemporary Spanish graphic artists and works from visiting Spanish photographers Beatrix Mexi Molnar and Andres Marin. Olé will also be collaborating with the San Antonio Museum of Art on its exhibition Spain: 500 Years of Spanish Painting from the Museums of Madrid.
Finally, the closing day is scheduled for Sunday September 16 and the day’s events will feature an intercambio dinner with Spanish chefs working with Pearl chefs, a mariachi-flamenco performance with Spanish guitarist Luis Gallo performing with local San Antonio artists as part of Mariachi Lab and a Cabezudos (big heads) parade representing key figures in the city’s history. A short film, the product of a collaboration between visiting Spanish and San Antonio-based artists, will premiere at the event.
